Ingredients
  • 8 oz baby spinach
  • 1 teaspoon white sugar
  • 2 eggs
  • 8 chopped bacon slices
  • ½ teaspoon Dijon mustard
  • 4 sliced white mushrooms
  • ½ thinly sliced red onion
  • 3 tablespoons red wine vinegar
  • Salt and black pepper, to taste
Instructions
  1. Remove the stems from the spinach and wash it, then pat it dry.
  2. Simmer the eggs in water for 12 minutes, then shell them and slice each one into 8 slices.
  3. Fry the bacon and drain on paper towels, keeping 3 tablespoons of the fat.
  4. Crumble the bacon.
  5. Transfer the fat to a small pot over a low heat, then whisk in the sugar, vinegar, and mustard.
  6. Season with salt and pepper, add the mushrooms and onion to the spinach, and toss.
  7. Add the bacon and dressing and toss again.
  8. Divide the spinach between 4 bowls and divide the egg between those.
  9. Taste and season with more pepper if you like.
