Lebanese Fattoush Salad Recipe
This traditional Lebanese salad is made with fresh vegetables, pita bread, and a delicious herby dressing. You can omit the pita and sumac if you do not have those ingredients, and you will still get a great fattoush salad recipe. This fresh-tasting meal is lovely served with some hummus on the side, or you can make it as a side dish to serve with grilled chicken breast.
Fattoush is made with toasted or fried pita bread, as well as other mixed vegetables, depending what is in season. It is a good way to use up pita breads which have gone stale. Tabbouleh is a similar dish but that is made with finely chopped vegetables, whereas the veggies in fattoush are coarsely chopped. Sumac is added to fattoush to give it a distinctive flavor but you can leave this out if you do not have any.
Common ingredients in fattoush include cucumber, tomato, radish, lettuce, sumac, mint, onion, pita bread, salt, lemon juice, and olive oil. Optional ingredients include red or green bell pepper, carrot, parsley, feta cheese, red cabbage, black pepper, garlic, and black olives, so feel free to add any of these if you want to. Lebanese home cooks like to use whichever local produce is in season for the freshest fattoush result.
- ¼ chopped green bell pepper
- 1 chopped tomato
- 1 sliced cucumber
- 1 sliced onion
- 2 chopped toasted pita breads
- 1 tablespoon chopped fresh mint
- ¼ cup lemon juice
- 1 teaspoon sumac (optional)
- ¼ cup extra-virgin olive oil
- ¼ cup chopped fresh parsley
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Put the tomato, cucumber, onion, and bell pepper in a bowl.
- Stir the lemon juice with the oil, mint, parsley, salt, pepper, and sumac, to make the dressing.
- Toss the dressing with the vegetables and pita bread pieces just before serving.
