  • 1 ½ lbs potatoes in ½ inch cubes
  • 2 peeled, seeded and diced cucumbers

  • 2 chopped green onions
  • 4 tablespoons extra-virgin olive oil
  • 4 tablespoons white wine vinegar

  • 2 oz crumbled feta cheese (optional)

Instructions
  1. Put the cucumber pieces in a colander and sprinkle salt over them to draw out the excess moisture.
  2. Let them sit for 30 minutes.
  3. Simmer the potatoes in salted water for 15 minutes or until they are tender but not mushy.
  4. Whisk the extra-virgin olive oil, beef broth, and white wine vinegar with a pinch each of salt and black pepper, to make the dressing.
  5. Drain the potatoes and rinse them under cold water until they are cool.
  6. Toss with the cucumber, red onion, green onions, dressing, and feta cheese (if you are using it).
  7. Cover and chill for 4 hours in the refrigerator so the flavors can blend, then serve chilled.
