Red Potato Salad Recipe with Dijon Dressing

This easy red potato salad recipe can be served warm, at room temperature or chilled. It is delicious served with beef, pork, or chicken, and it is also great to take on a picnic.   • 4 lbs small red potatoes
  • 1 thinly sliced onion
  • 2 thinly sliced celery stalks
For the Tangy Mustard Dressing:
  • 2 tablespoons sweet pickle relish
  • 2 tablespoons wholegrain mustard
  • 1 teaspoon finely chopped fresh parsley
  • 2 tablespoons red wine vinegar
  • 1¼ cups mayonnaise
  • Salt and black pepper, to taste
  1. Put the potatoes in a pot and add enough cold water to cover them by 1 inch.
  2. Bring to a boil over a high heat, then reduce the heat to medium-low and simmer for half an hour or until the potatoes are easily pierced with a fork.
  3. Drain the potatoes and let them cool for 10 minutes.
  4. Cut the red potatoes in half (or quarters if they are quite big) and place them in a large bowl.
  5. Add the onion and celery.
  6. Whisk the mustard with the relish, parsley, vinegar, mayonnaise, salt and black pepper.
  7. Pour this dressing over the potatoes and gently stir to mix.
  8. Serve at room temperature or chilled.
