Herby Potato Salad with Beer Dressing

This delicious potato salad with beer dressing is made with red potatoes and onions. You can serve it warm or let it cool to room temperature. The beer dressing is flavored with malt vinegar (or you could use cider vinegar) and mustard, and this delicious potato salad with beer dressing would make the perfect side dish for German sausages, or for a grilled steak.

This recipe makes one cup of dressing, which is sufficient for two and a half pounds of red potatoes. If you prefer, you can use a different variety of potatoes. If they are big ones, chop them before cooking. If they are small, you can slice or chop them after cooking.

Ingredients
  • 2 ½ lbs red potatoes
  • ¼ cup finely chopped parsley
  • 2 tablespoons chopped chives
  • ½ cup finely chopped onion
For the Beer Dressing and Chives:
  • ½ teaspoon white sugar
  • 6 tablespoons olive oil
  • ½ cup finely chopped onion
  • 3 tablespoons malt vinegar
  • ¾ cup lager beer
  • 1 tablespoon Dijon mustard
  • Salt and black pepper, to taste
Instructions
  1. Boil the potatoes in salted water for 20 minutes or until you can easily insert a knife point.
  2. While they cook, you can prepare the beer dressing recipe.
  3. Heat 2 tablespoons of the olive oil in a skillet over a moderate heat and sauté the onions for 5 minutes or until tender.
  4. Add the lager beer, vinegar, and white sugar and boil for 5 minutes.
  5. Add this mixture to a food processor with the mustard.
  6. With the food processor running, slowly pour in the remaining 4 tablespoons of oil.
  7. Season to taste with salt and black pepper.
  8. Slice the cooked potatoes into ¼ inch rounds without peeling them, when they are cool enough to handle.
  9. Stir the potatoes with the parsley, onion, and dressing while they are still warm.
  10. Do not over-mix them, else they might break.
  11. Season to taste with salt and black pepper.
  12. Garnish with chopped chives.
