Herby Potato Salad with Beer Dressing

This delicious potato salad with beer dressing is made with red potatoes and onions. You can serve it warm or let it cool to room temperature. The beer dressing is flavored with malt vinegar (or you could use cider vinegar) and mustard, and this delicious potato salad with beer dressing would make the perfect side dish for German sausages, or for a grilled steak.

This recipe makes one cup of dressing, which is sufficient for two and a half pounds of red potatoes. If you prefer, you can use a different variety of potatoes. If they are big ones, chop them before cooking. If they are small, you can slice or chop them after cooking.

This certainly is an unusual recipe, because not many salad recipes include beer, but beer is a versatile ingredient which can be combined with flour to make a wonderful fish batter, added to stews for a hearty flavor accent, or used in another way, such as in this salad dressing. The piquant flavors of malt vinegar and Dijon mustard feature in our beer-infused salad dressing, along with other ingredients. The main salad is red potatoes, onion, parsley and chives, and you can expect a rich, meaty flavor in every bite of this salad. Enjoy it with your favorite kind of meat or make a batch and take it along to a potluck supper if you like. Everyone will be fascinated by the flavor and how you introduced such a rich, earthy taste into the dressing.

Photo Description:

This full-flavored potato salad is made in the German style, not with mayonnaise but with oil, vinegar, onions, mustard, and even a splash of lager beer for a warm, hearty flavor. Boil the potatoes first, and then while they are cooling you can make the dressing which also needs to be simmered for a short time. This certainly makes a change from your standard American mayonnaise-based potato salad, and the German influences in the recipe make it a good side dish for ribs, sausages or a nice, juicy steak. A chopped chive garnish is nice, or you might like to crumble over some crispy bacon instead.
