  • 6 ears fresh corn
  • 2 cups cherry tomatoes
  • 1 finely chopped red onion
  • 2 tablespoons seasoned olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, to garnish
For the Summer Watermelon Dressing:
  • 2 cups chopped fresh watermelon
  • ½ cup extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • ⅓ cup finely diced red onion
  • 1 ½ tablespoons chopped fresh basil
  1. Remove the husks and silks from the ears of corn.
  2. Rub the seasoned olive oil over the corn and sprinkle salt and pepper over it.
  3. Grill over a moderately high heat until the ears of corn are lightly browned.
  4. This will take about 7 minutes. Take the corn off the grill and let it cool.
  5. Take the kernels off the cob and add them to a big bowl.
  6. Stir in the red onion and tomatoes.
  7. Drain the watermelon, pulse it in a blender with the vinegar, red onion, basil, olive oil, and honey until it is well combined.
  8. Stir the dressing into the corn.
  9. Season to taste and garnish the dish with parsley.
